A quick idea that uses one of my favourite combinations – blackberries and chocolate.  Raspberries also work well in this dish.  Use white or dark chocolate – either way these brownies ar delicious.


3 eggs
175g/6oz caster sugar
110g/4oz good quality white or dark chocolate
75g/3oz butter or margarine – softened
110g/4oz self-raising flour for cakes
110g/4oz fresh blackberries
50g/2oz chocolate chips – optional
Cocoa powder or icing sugar for dusting


Beat together the eggs and half of the sugar until you have a light creamy mixture.  Using a spatula, fold in the remainder of the sugar.  Do not over beat the mixture at this stage.

Break the chocolate into pieces and melt in a bowl over a pan of warm water.  Add the butter to the chocolate and stir until both have completely melted.

Add the melted chocolate to the egg mixture and mix.  Fold in the flour and blackberries.

A few chocolate chips can be added at this stage to give more texture to the brownies.

Transfer the brownie mixture to a lined square 15cm/6 inch tin and bake in the oven @ 180°C/gas mark 4 for 25-30 minutes.

When cooked and firm, remove from the oven and cool on a tray.  Cut into squares and dust with cocoa powder or icing sugar.
