This cream can be flavoured with chocolate, coffee, lemon, vanilla or a liqueur of your choice.
150ml/ ¼ pt double cream
2 tbsp milk – ice cold
2tbsp icing sugar
½ tbsp vanilla essence 1 tbsp water – iced
Zest of ½ lemon
Place the cream and milk in a very cold bowl and whisk until the mixture doubles in volume. This should take around 3-4 minutes.
Add the icing sugar, vanilla essence, water and lemon zest and continue to whisk for a further minute
