Summer Berries in a Passion Fruit Sauce with Farm Ice-Cream
Approximately 450g/1lb assorted summer fruits
2 passion fruit
25g/1oz icing sugar
Zest and juice of ½ lime
25g/1oz flaked almonds – toasted
Prepare the fruits and lightly mix in a bowl with the freshly squeezed seeds and juice form the passion fruit. Add the icing sugar, lime zest and juice. Toss and leave to infuse for 1 hour.
Serve in individual glasses or layer in a large glass bowl with ice-cream and top with flaked toasted almonds.
