Spiced brisket of beef with chilli and honey

Ideal to cook by roasting or in a slow cooker
Can be served in a pie, floury bap with local vegetables or
Seasonal salads.

Ingredients:
1 piece of beef brisket 4-6 lbs
1 tsp sea salt
Black pepper
2 dsp soft brown sugar
1 tsp smoked paprika
4 dsp balsamic chilli and honey vinegar
½ tsp chilli flakes
1 tsp onion powder
2 tsp Worcestershire sauce

Method:
Season the meat well with all the dried spices then place in foil and cover with the remainder of ingredients. Pat down well on both sides, then place in a baking dish and leave to marinade for up to 24 hours. To cook, bake in a preheated oven 200°C, gas mark 6 for 30 minutes. Then reduce the temperature to 140°C, gas mark 3 for 4-5 hours until the meat is cooked, tender and falls apart when pulled with a fork. It can be served hot or cold, great for party food, served with salads and ideal with roasted pear, plums, figs and red onions & baby potatoes. Cooked with garlic, shallots, balsamic, honey, brown sugar and a little oil.
