Summer Barbecue Sauce

Tasty, great vegetarian dish, an ideal sauce for barbeques

1 dsp oil
1 onion, red or white – sliced
2 cloves garlic – chopped
100g/4oz baby tomatoes
100g/4oz sliced mushroom
1 dsp tomato puree
1 tsp mustard
100g/4oz soft brown sugar
1 x 13oz can tinned tomatoes – chopped
4 dsp. Balsamic vinegar
Pinch of cayenne or paprika pepper
2 dsp maple syrup

Heat the oil in a large based pan. Add the chopped onions, garlic, mushrooms, tomatoes and cook gently for 2-3 minutes. Add the tomato puree, mustard, sugar, alsamic vinegar, tinned tomatoes, cayenne, maple syrup. Simmer for 15 minutes then serve.
